Irish Soda Bread
Happy St. Patrick’s Day! While soda bread can be enjoyed alone, we like to make rolls and use it as the base for a sandwich. Use extra corn beef and cabbage with a little mustard for a perfect lunch or snack!
Irish Soda Bread
makes 1 loaf, or 16 rolls
3 cups all purpose flour
½ cup sugar
1 ½ tsp baking soda
½ tsp salt
1 stick butter, slightly softened, cut up in pieces
1 cup (or slightly less) of raisins
8 oz. plain yogurt
1 egg slightly beaten
About ¼ cup of water
Preheat oven to 350 degrees. Grease bottom of pan (9 inch pie pan works or cookies sheet with sides). Combine all dry ingredients (except raisins) in mixing bowl. With 2 knives or a pastry blender, cut in butter until mixture resembles coarse crumbs. Add raisins. Stir in yogurt and beaten egg. (Batter should be thick and sticky). Add water until well combined. Form dough into ball with 6 inch base. Place on baking tin. Bake 40-45 minutes until knife inserted in center comes out clean (outside will be crispy brown). Cool on wire rack. Serve warm with salted butter.
